We have for you a wonderful sampler of Spanish cheeses. Five of our favorites are sliced into thick wedges for you to sample or use an appetizer. Manchego Cheese, D.O. - Spain's famous sheep's milk cheese from La Mancha; mild and smooth taste pairs well with wine and membrillo. Roncal, D.O. - A pasteurized sheep's milk cheese from the Roncal Valley. Roncal is aged for a firm bite and sharp, nutty flavor that goes well with Jamon Serrano and olives. Cabra al Vino - A cured goat's milk cheese with the rind soaked in red wine. Cabra al Vino is full of flavor with a hint of fruit from the wine soaked rind. Enjoy it melted on crusty bread or sliced over a salad. Mahón - A pasteurized cow's milk cheese from the island of Menorca. Great with chorizo or olives, mahón has a salty, slightly nutty flavor attributed to the seaside grazing of the Menorcan cows. Iberico - A cow, goat and sheep's milk cheese; lightly cured and firm textured, Iberico has an herb flavor and a mild goat milk tang. Pair it with a glass of tempranillo wine and chorizo. What a fine way to introduce yourself to traditional Spanish cheeses, and at the same time have on hand an instant tapa for unexpected guests.
